Broccoli & Leek Soup 09/16/11

Who knew soup could be so quick? Check out this raw food broccoli and leek soup recipe. And raw doesn't mean it's cold.

Broccoli and Leek Soup
Serves 4

Ingredients:
½ avocado
500 ml hot water
1 small head broccoli, chopped
4 medium-sized leek stalks
¼ cup olive oil
1 teaspoons Himalayan rock salt
1 tablespoon nutriyeast
¼ cup pinenuts
¼ cup cashews
¼ cup sesame seeds

Method:
Blend all the ingredients (except the sesame seeds) until smooth.
Add the sesame seeds at the end and whiz through.
Serve with a dollop of raw cream cheese and a swirl of olive oil.
Garnish with sprouts or a sprig of parsley

Raw Cream Cheese
Ingredients:
2 ½ cups Macadamias
2 cups water
1 tablespoon lemon juice
1 tablespoon agave (or raw honey)
1 teaspoon Himalayan rock salt
4 probiotic capsules

Method:
Blend all the ingredients except the probiotics together in a powder blender until the nut cheese is completely smooth. Empty the contents of the probiotic capsules into the mix and blend through on low speed.

Divide the mixture into 2 jars of approximately 300ml.
Allow for fermentation time of 24-48 hours

4 medium leek stalks?? There is no way that this will serve only 4 people if I understand what you mean by 4 stalks. Are you separating the layers of one leek, and that is what you mean by the stalk? Would you mind clarifying, because this recipe sounds really good! :)

Hi Liz – I’m waiting for the recipe creator to respond. I imagine it would be four entire stalks, chopped into rings. But I will get back to you!

Hi there. Beryn responded – here’s what she said:

“I used 4x small leeks from Woolies when I made this recipe.
If you use 4x large ones eg from organic zone – it will taste HECTIC.
So start with 1 or 2 x leeks depending on the size of your leeks and add more if desired.

Hi Liz, organic leeks are very strong so more than 4 would overpower the taste. The other ingredients bulk it up, but its still a light soup. Enjoy, Peter.
