Broccoli & Leek Soup 09/16/11
Who knew soup could be so quick? Check out this raw food broccoli and leek soup recipe. And raw doesn't mean it's cold.
Broccoli and Leek Soup
500 ml hot water
1 small head broccoli, chopped
4 medium-sized leek stalks
¼ cup olive oil
1 teaspoons Himalayan rock salt
1 tablespoon nutriyeast
¼ cup pinenuts
¼ cup cashews
¼ cup sesame seeds
Blend all the ingredients (except the sesame seeds) until smooth.
Add the sesame seeds at the end and whiz through.
Serve with a dollop of raw cream cheese and a swirl of olive oil.
Garnish with sprouts or a sprig of parsley
Raw Cream Cheese
2 ½ cups Macadamias
2 cups water
1 tablespoon lemon juice
1 tablespoon agave (or raw honey)
1 teaspoon Himalayan rock salt
4 probiotic capsules
Blend all the ingredients except the probiotics together in a powder blender until the nut cheese is completely smooth. Empty the contents of the probiotic capsules into the mix and blend through on low speed.
Divide the mixture into 2 jars of approximately 300ml.
Allow for fermentation time of 24-48 hours
