Cold Gold interview 03/19/13
We interview Janine Van Zyl about her Cold Gold artisanal ice cream and sorbet business.
Desserts have been close to my heart since I was a little girl. After matric I enrolled at the Prue Leith Chef’s Academy in Pretoria and achieved my Grande Diploma in Culinary Studies and Wine with a distinction. After that I worked at the Mount Nelson – and Twelve Apostles – Hotels under the highly respected chefs, Rudi Liebenberg and Henrico Grobbelaar respectively. Working alongside these chefs served as more inspiration for my intense love of culinary arts and strive to create the best and most sensational culinary creations possible.
In November I identified a need for an ice cream that is 100% natural, free of preservatives, chemicals and artificial additives, as well as options for those on specific diets. All that was left to do was to add a bit of passion, a dash of perfection, a tablespoon of dedication and a big chunk of love to the production of artisan ice creams and sorbets. And so Cold Gold was born.
Tell us a bit more about Cold Gold?
Cold Gold is an artisan producer of ice creams, sorbets and practically any frozen fantasy, based in Stellenbosch. All products are prepared from using only fresh, seasonal and local ingredients. Cold Gold endeavours to use as many organic, fair trade ingredients as possible and regularly drive from farm to farm to source the best products from local farms and small producers in the heart of the Winelands.
Only the best and freshest ingredients are used and absolutely: No artificial flavouring and colouring, no stabilisers, no preservatives and no chemicals!
Cold Gold believes that everybody should be able to have their dream dessert and eat it. Any ice cream dream can become a reality – even if you have special dietary requirements (can be prepared with homemade soya, nut, rice, oat, quinoa, goat, seed or practically any milk… with or without eggs… with or without sugar… your dream in any flavour is our command).
The Cold Gold treasure freezer is the only place where you can find full cream Organic Jersey milk- , fat free- and vegan ice creams and sorbets that taste like “the real thing” in over 400 flavours (all natural of course)!
Cold Gold also has a selection of other treats such as: Gold Cones (delectable homemade cones filled with ultra creamy ice cream and various toppings), Ice Cream Sandwiches, Ice Cream Cookies, Ice Cream Cakes and Cream Pops (the creamy frozen sister of the cake pop).
What are your favourite vegan options?
Definitely my almond milk chocolate ice cream – made with pure almond milk, cocoa paste and dates – it’s super healthy and delicious!
Do people tend to notice the difference?
No, the texture is still very creamy, smooth and delicious. I’ve had times at markets where my normal ice cream would sell out and I only had vegan options left. Non-vegan clients often commented that would not have noticed the difference had I not told them that they were having vegan ice cream.
Why do your friends call you the queen of vegan desserts?
I can adapt any “normal” dessert into a spectacular vegan creation without people noticing the difference… Non-vegan guests have loved and enjoyed my raw cashew cheesecakes with vanilla hazelnut milk ice cream without even knowing that there was no cooking or animal products involved!
What’s something that most people don’t know about ice cream?
It does not have to be made with milk, cream, eggs or sugar… it can be adapted to ANY dietary requirement, you should just know your formulas and add a lot of love. Almost all store bought ice creams and sorbets are full of unwanted chemicals, preservaitves, stabilisers, etc. which can be detrimental to your health.
For those on a gluten free diet, all my products are gluten free (ice creams, sorbets, fat free ice creams, vegan ice creams, etc) and I even make breads, pizza bases, wraps, etc on the side line (all vegan as well).
