Fresh Chickpea Salad 12/05/10

Chickpea salad with fresh mint, coriander and basil.

Recently, I decided to have a small veggie potluck at my house. After asking around for some inspiration at the office, I was provided with the most wonderful salad recipe. While you could serve this as a side – it was so scrumptious that I could quite easily eat a whole bowl of it on its own.

With summer almost in full swing, this is a perfect dish for braais, dinner parties or even as a side dish for a Christmas lunch.

Ingredients: (serves 8 as a side)
4 x cans chickpeas (rinsed)
2 x bunches of coriander
2 x bunches of basil
2 x bunches of mint
2 x bunches of parsley (optional)
2 x red onions
12 x cloves of garlic
1-2 chillies
½ cup olive oil
½ cup red vinegar
1 x large avocado
Spring onion to taste
Optional: a small tub of feta

Method:
Slice the onions into thin rings, and finely chop the garlic and chillies.
Using a large saucepan, fry the onions, chillies and garlic in a splash of oil on medium heat.
When the onions are translucent (do not brown them) add half a cup of red vinegar and increase the heat to reduce the liquid until it is almost cooked away.
Finely chop the remaining fresh ingredients and mix with the chickpeas and olive oil. Add this to the saucepan and stir together with the onion mixture on a low heat.
Once warmed, remove from the stove and add chopped avo and crumbled feta on top

Voila! You have now created a deliciously tasty, fragrant and healthy salad that will wow your guests with it’s fantabulousness.
