Some days it seems like there is nothing to eat in the kitchen. After stomping around, opening cupboards and peering into the back of the fridge, I thought, “I’m going to have to order takeaway…”

But this is generally not really the truth, it’s just laziness. After digging a little deeper, I unearthed some sweet potatoes and a variety of random veggies. I knew then what was on the cards: A vegetable bake!

One of the easiest meals around. A vegetable bake!

Mix all your various vegetables together with some nice spices, turn the oven on, drizzle with olive oil and an hour later you’re ready for dinner. This is healthy, tasty and best of all – very easy to make.

Ingredients:
2 large sweet potatoes
1 large carrot
1 onion
1 green pepper
Half a pineapple
Half a head of broccoli
Good chilli spice ( I use a delicious masala mix given to me by a friend)
Salt and pepper to taste

Garnish
Handful of baby spinach
Yoghurt (optional)

Method:
Preheat oven to 200 degrees Celcius. Chop all the vegetables and layer in a shallow dish. Mix in your spices, drizzle with oil and pop in the over for about an hour or until sweet potato is cooked through.
Add the spinach and yoghurt just before serving.

Ready to eat!
