Simple Salad Wrap 02/15/11
Throwing a wrap together is a super quick and super tasty summer supper option.
I think that wraps (or rotis, torillas or pitas) are some of the most versatile food items around – the only limitation is your own imagination and what combination of fillings you can come up with.
This evening I whipped up some tasty rotis in no time. Rotis make for a change from tortillas and taste great even when not served with curry. The meal is also relatively healthy if you ignore the oil, salt and flour in the roti!
Ingredients (quantities are not precise, and you can add anything you happen to have in the fridge):
Wraps, rotis or tortillas
Handful of baby tomatoes
Decent sprinkling of feta if you’re not vegan
Red onion, finely chopped
Robertson Mexican spice
Mix all your toppings, except the lettuce, in a bowl. (This is a very easy way of approaching wraps). Season to taste. Spread some basil pesto directly onto your wrap (heated if necessary on a dry, hot pan). Add your topping mix, some lettuce and wrap tightly. Yum.
