It’s time for the Vegetarian Society’s Christmas recipes!

This year’s 12 Days of Christmas themed menu has a whole lot of interesting and different ideas that cover everything from tasty starters to hearty mains.

They all look scrumptious, and not too difficult to prepare.

I particularly like the Festive Figs with Feta starter, and the delicious looking Potato Nests with Artichokes, Oyster Mushrooms and Sun-dried Tomatoes. That said, the Roasted Celeriac, Blue Cheese and Apple Stack looks easy to make and very impressive to serve.

The recipes were created by the Vegetarian Society’s Cordon Vert cookery school, Alex Connell Principal Tutor said, “Christmas has many culinary traditions and flavours, some old some new, this recipe collection is full of rich, rounded flavours with a sprinkling of seasonal surprises too. I hope you will enjoy making these recipes as much as we did developing them.”

While not all the recipes are vegan, most of them can be easily adapted to be vegan.

Here’s a rundown of the vegan-friendly recipes:

Potato Nests

Festive Layered Loaf

Luxurious Leeks and Walnuts

Jewelled Sponge Puddings with Brandy Sauce

Second Day Strudel

Snow Angel Cake

Christmas Baskets
